Kitchen Opening/Mid Day Checklist

OPENING
Turn on pizza oven (Temp should be set at 450 degrees and time should be set at 3:45)
Turn on both vent hood switches
Turn on fryer
Check all freezers and refrigerators to make sure they are properly working
Turn on monitor for the camera to the food court
Make sure that we have everything needed to make every item on the menu and let management know if we are out of something
Prep pizzas for parties that are starting soon
Make sure food is portioned out and dated
Make sure there is cheese in the walk-in cooler and if there is not get some from the freezer outside
Make sure there are no empty boxes in the walk-in freezer or cooler
Put sauces in crock pots and set them to "Keep Warm" (Stir occasionally)
Juke Box is on and main music is playing
MID DAY
Do the dishes
Clean up any messes
Make sure countertops are wiped down and all food is put away
Sweep & Spot Mop
Make sure all empty boxes are broken down
Ensure that area is completely clean for the person taking your spot (if any)
